These new speedy salad recipes can all be made in under 20 minutes, with minimal prep, and are packed with nutritious, seasonal produce to help you look and feel your best.
1. Harissa chicken, cucumber ribbons and orange

We’ve served a delicious harissa spiced chicken breast with juicy fresh orange slices and hydrating cucumber ribbons. Our vibrant radishes, grown by Peewit Produce in Worcestershire, add a peppery flavour and crunchy texture; but the pièce de résistance is the moreish turmeric, lemon and coconut drizzle, which adds an anti-inflammatory boost.

2. Warm red pesto beans, artichokes and rocket

This warm and satisfying summer salad is bursting with Mediterranean flavours from red pesto coated butter beans, sundried tomatoes and fibre-packed artichoke hearts. The rocket, from ValeFresco our partner farm in the Cotswolds, adds a peppery punch to this salad, whilst slices of creamy avocado and a scattering of pumpkin seeds provide omega 3 and 6 fatty acids.

3. Zingy salmon, heritage tomatoes and mangetout

We’ve baked Scottish salmon with an Asian-style dressing of grated ginger, tamari, honey, chilli and lime, served on a bed of brown rice with crisp mangetout and juicy heritage cherry tomatoes. Our heritage tomatoes, like our rocket, are grown by Valefresco in the Cotswolds. Rich in vitamin C and lycopene, heritage tomatoes are famous for their unique taste, colour and health benefits. The addition of olive oil in this recipe enhances absorption of antioxidant lycopene.

4. Spiced steak fajita salad, peppers and avocado

We’ve spiced flat iron steak with ground cumin, smoked paprika and garlic for our fajita-inspired salad, served alongside roasted red peppers, creamy avocado and baby spinach, a nutritional powerhouse. The grass-fed beef comes from award-winning butchers Farmison, based in the Yorkshire Dales.
