Once confined to soggy school dinners and sad Sunday roasts, cauliflower has experienced a revival over the past few years, with many people now blitzing it up to produce a low-carb, low-GI rice substitute.
But after a long day at work we're thankful for cauli rice; a healthy pre-made cauliflower rice without all the mess and fuss! This gets a big tick in our box, saving time and making healthy eating easy, which is essentially what we are all about here at Mindful Chef.
To celebrate Cauli Rice's recent campaign - featuring our very own co-founder Myles - We decided to share our 6 favourite fast dinners that incorporate this humble veg.
1. Lentil & sweet potato dahl with cauli rice recipe
Our spiced red split lentil dahl is served with delicious fibre-rich cauliflower rice and flaked almonds to help keep skin healthy.
2. Chicken & lemon tagine with cauli rice recipe
Lemons are an excellent source of vitamin C and regular consumption can reduce the risk of infection. They are also great for digestion and have detoxifying properties.
3. Lamb tikka kebabs & apricot cauli rice recipe
Succulent tikka spiced lamb kebabs paired with fragrant cauliflower rice, dried apricots, cardamom and wonder spice turmeric, known for its incredible anti-inflammatory effects.
4. Goan fish curry with cauli rice & almonds recipe
We've used flaked almonds as they are rich in vitamin E which supports the brain, the cardiovascular and respiratory systems, and helps to promote healthy skin.
5. Asian steak skewers with pak choi salad & cauliflower rice recipe
These succulent skewers are flavoured with tamari, chilli, sticky honey and ginger, excellent for digestive health.
