We've been busy in the Mindful Chef kitchen creating the ultimate home-made protein balls. So delicious and simple to make, these are packed full of protein, vitamins and omega 3 fatty acids from the ground flaxseeds, chia seeds, almond butter and chopped cashews. Vegan and gluten-free, they also contain ancient superfood maca, a nutrient-dense root from South America, known to boost energy and mood.

The perfect afternoon pick me up... try not to eat them all at once!

Ingredients

120g almond butter
50g ground flaxseeds
2 tbsp maca powder
1 tbsp chia seeds
1 tbsp desiccated coconut
1 tbsp maple syrup

To coat 15g cashew nuts, finely chopped

Mix all the ingredients together in a bowl until fully combined, then form into 8-10 balls. Roll the balls over the finely chopped cashew nuts and place in the fridge for 30 mins to firm up. Enjoy!
