We are hugely excited to announce that top nutritionist and cookery book author, Julie Montagu, has created a delicious range of plant-based recipes for our customers to enjoy throughout March.
Julie is a big and well respected name in the vegan world. She is passionate about cooking imaginative and superfood packed plant-based meals, having written three healthy cookery books, including her new book ‘Eat Real Food’ out mid March. Julie has a wealth of knowledge on nutrition and is a certified holistic health counsellor meaning she is a perfect fit for Mindful Chef.
We’ve loved cooking up Julie’s plant-based recipes in the Mindful Chef kitchen, we hope you enjoy them as much as we do!
We’re delighted that you have created a collection of delicious plant-based recipes for us. Where did you get your inspiration for these dishes?
To be honest, I get my inspiration from my 4 kids! I know what they like and don’t like and then create recipes from those foods. And to be honest, they are VERY good at giving me the thumbs up… or down!
We’re really excited about the release of your upcoming book ‘Eat Real Food: Simple Rules on How to Eat for Pleasure, Energy and Amazing Health’ – can you briefly describe what people can expect to find inside?
My view is that eating healthy doesn’t have to be complicated or confusing. But somewhere along the way, even the most health-conscious of us can become overwhelmed by the endless information and advice available to us, and feel tempted to give up. Eat Real Food takes things back to basics, and guides you to make simple but positive dietary choices that will increase your intake of what I like to call the ‘Flexi Five’ – the five healthy food groups that are most important for keeping your brain and body balanced and happy:
- Green leafy vegetables
- Whole grains
- Healthy fats
- Natural sweeteners
I then introduce you to the superheroes in each of these different food groups, share the best ways to prepare them, explain their nutritional benefits, and then provide a variety of imaginative ways to include these foods in your diet every day, whether you’re at home or on the go. As well as delicious recipes, I share how you can improve your health and increase your happiness with meditation, affirmations, simple breathing exercises and gentle yoga poses. You can have boundless energy and glowing health, you just need to give your body the food and attention it craves and deserves. It really is that simple!
What are your essential top 5 tips for anyone kickstarting their health regime
Stop buying and eating processed and packaged foods, follow my ‘Flexi Five a Day’ (it’s easy!), Meditate 2 minutes a day (it actually can help with weight loss and reduce stress), Breathe consciously for 5 minutes a day (this will help calm the body but increase the mind) and try to get in 10 minutes of movement a day (this will kick start the endorphins and put you in a good mood!)
As a mum of four following a plant-based diet, what staple ingredients are always in your fridge?
Avocados, carrots, broccoli, spinach, tofu, courgettes and red peppers. I can pretty much make anything from these staples!
Aside from your passion for Yoga, what exercise do you enjoy?
Well, you can often spot me cycling around London – I cycle from yoga class to meetings to lunches to home and so on. I love cycling as it puts me in such a good mood! Even when it rains…. I suspect it’s those endorphins!
And finally, what exciting things can we expect to see from you in the future?
I’ve got my next cookbook out in July – Superfoods Superfast: 100 Energising Recipes in 20 minutes or less – it’s full colour too and the follow up to my first cookbook Superfoods. I also have 2 new online courses for my Flexi Foodie Academy launching in March – one’s called ‘Julie’s Guide to Joyful Living’ and the other ‘Julie’s Yoga for Healthy Living’ so I can’t wait for those to launch as it’s been months in the making.
And then lastly, I’ve recently taken over the Gift Shop at Mapperton – my husband’s family estate in Dorset and it’s been rather fun creating jams, chutneys, biscuits, tea towels and more! Gardens and the House open 1st April so I’m preparing for that. And well, there’s always fun stuff in the pipeline…. stay tuned!
