These seriously tasty fruity ice lollies are the perfect pick me up for warm summer afternoons. Packed with vitamins from the ripe summer peaches, these are not only dairy-free but vegan friendly too! To make these ice lollies, we've mixed fresh peaches with roasted peach slices, and combined these with creamy coconut and sweet maple syrup for a deliciously indulgent flavour.

Peaches provide us with vitamin A & C, are a great source of dietary fibre, and are also known to relieve stress. We can't get enough of them!

Here's our recipe to make 6 ice lollies.

Ingredients:

  • 4 ripe peaches, peeled
  • 160ml coconut cream
  • 120ml cold water
  • 4 tbsp maple syrup

Method:

  • Preheat the oven to 180C / gas mark 4.

  • To make the roasted peach slices; de-stone one peach and cut into 12 slices, removing the stone. Place the peach slices on a baking sheet on a baking tray and drizzle over 1 tbsp maple syrup. Place in the oven for 10-15 mins until soft and beginning to caramelise.

  • To make the peaches & coconut cream mix; de-stone the 3 remaining peaches and cut into chunks. Add to a blender or food processor with the coconut cream, water and remaining maple syrup. Blend for 1 minute or until fully combined. You can add more maple syrup to taste.

  • Once the roasted peach slices have cooled, pour the peach & coconut cream mix into the ice lolly moulds, adding 2 peach slices into each mould as you go (you can push these to the side of the mould so these can be seen). Repeat with the remaining moulds. Freeze overnight, then enjoy!
