To Poke or not to poke? Is the question in hand. And we aren’t referring to rude gestures or the outdated Facebook application. Poke, pronounced poh-kay, is the Instagram-worthy meal in the spotlight. Originating from Hawaii, poke typically consists of raw fish, an assortment of vibrant, crunchy vegetables and an Asian-inspired dressing, often served on a base of rice.
But what makes poke so fun is that it is totally customisable and so there are endless possibilities when it comes to flavour and texture combinations. Chef Louisa has created our very own Mindful Chef Hawaiian-style poke bowl with crispy tofu - yes, you read that correctly - our creation replaces traditional raw fish with crispy tofu, so it is vegan-friendly too! Drizzled in a mouth-watering ginger, lime, tamari and sesame dressing, this is not one to miss (and it’s on the menu this week!).
So why is it healthy? Well, for many reasons. Our colourful poke bowl is bursting with vitamins, minerals and fibre from the creamy avocado, crunchy radishes and carrot ribbons. The healthy monounsaturated fats, vitamins E and C, in avocado are amazing for your skin, whilst beta-carotene in the carrots are great for eye health. We’ve also served it with tri colour quinoa, which is a source of complete protein, as it contains all 9 essential amino acids, important for tissue growth and repair. The list goes on.
