Summer is in the air, and as the weather heats up we turn to ice cream to cool us down. Instead of reaching for shop bought ice cream try making this incredible tasting natural version yourself. This is such a simple and quick recipe with only 4 ingredients which takes 5 minutes to make, you just need to freeze the bananas and strawberries for a few hours (or overnight).
You'll be amazed at the smooth creamy texture, you'll never want to buy ice cream again!
- 2 frozen bananas, peeled & each cut into 3 pieces
- 4 frozen strawberries, green stalks removed
- 50ml coconut milk
- 1/2 tbsp desiccated coconut
Place the bananas, strawberries and coconut milk in a blender or food processor and blend for 1 minute, or until all the ingredients are well combined.
Spoon into bowls and sprinkle over the desiccated coconut. Enjoy!
