Summer is in the air, and as the weather heats up we turn to ice cream to cool us down. Instead of reaching for shop bought ice cream try making this incredible tasting natural version yourself. This is such a simple and quick recipe with only 4 ingredients which literally takes 2 minutes to make, you just need to freeze the bananas and strawberries for a few hours (or overnight).

You'll be amazed at the smooth creamy texture, you'll never want to buy ice cream again!

Recipe serves 4 people:

  • 4 frozen bananas, peeled & cut into 3 pieces
  • 8 frozen strawberries, green stalks removed
  • 100ml coconut milk
  • 1 tbsp maple syrup (optional)

To serve
- 1 tbsp desiccated coconut

Simply place the bananas, strawberries and coconut milk in a blender or food processor and blend for a minute or until all the ingredients are well combined. You can add a tablespoon of maple syrup for extra sweetness. We serve our strawberry & banana ice cream with a sprinkle of desiccated coconut. Enjoy!
